Peachy Pork Picante

INGREDIENTS

  • 1 pound Boneless Salmon Creek Farms Natural Pork Loin, cut into 3/4-inch cubes
  • 1-2 tablespoons taco seasoning mix
  • 2 teaspoons vegetable oil
  • 1 8-ounce bottle chunky-style salsa
  • 1/3 cup peach preserves

PREPARATION

Peachy Pork Picante

Coat pork cubes with taco seasoning.

Heat oil in large nonstick skillet over medium-high heat; add pork and cook to brown, stirring occasionally.

Add salsa and preserves to pan, lower heat, cover and simmer for 15-20 minutes.

Serve over rice, if desired.

Serves 4.
